Lemon Chiffon Cake

Day 164 Recipe 68
I have made a lemon chiffon cake before. This recipe was just like that one where you have to separate the eggs so you can whip up the egg whites. And you cook it in a tube pan, that is ungreased. This always make me extremely nervous!! I actually enjoy greasing and flouring pans. It always reminds me of a scene in Peggy Sue Got Married, which is a favorite movie of mine. Peggy is in the kitchen with her mom, helping her bake a cake, and she is flouring a pan for her. I know... its weird... but that is what I think of. So anyways... when making an angel food cake or chiffon cake you do not grease the pan. And don't... it won't come out if you do. I know... I tried!! This cake actually did really good and just 'fell' out of the inverted pan like it was supposed to. Good job cake!!

Lemon Squares

Day 162 Recipe 67
My absolute favorite thing about this recipe is that I was able to use lemons off my very own tree in my backyard!! I was so excited!!


This recipe took awhile. To make the lemon curd filling you had to sit, and continuously stir the mixture over a double-boiler for about 15-20 minutes. Then you bake them, then they have to refrigerate for at least 3 hours. Right at 3 hours the kids and I took them out and tasted them with a little bit of powdered sugar. My 5 year old had enough after just 2 bites. My 3 year old ate his and his brothers using mostly his finger!! I thought they were okay. I am not a huge lemon fan like some people (Libby :0). I mean, I like lemonade and that is about it. But I had another piece after dinner and this time I doused it in powdered sugar. And it was SO GOOD!! So good in fact... that I had another piece!! But shhh... don't tell!! :)

Vanilla Spritz Cookies

Don't you just love these plates?!? My very good friend and neighbor gave me a set of the cutest desert plates shaped like cupcakes for Christmas. I thought they would be just perfect to showcase all my goodies on. I mean, my blog is called Make it a Cupcake Kinda Day!! I really enjoyed making these cookies. It was the most fun I have had baking in a long time. Mainly due to the fact that I got to use my brand new cookie press that my wonderful husband got me for Christmas. The kids kept asking for a turn to use, but I was just having so much fun!! Anyways, the cookies were very good. Very simple, with lots of butter. Can't go wrong there!! :)

Pumpkin Pie

I made this pie to take to our annual Christmas Eve party. I have to admit... I did not actually have a taste of this pie. It looks really cute though!! The recipe was pretty simple to follow. All I had to buy was pumpkin and evaporated milk. Anyone who ate this pie at the Christmas party... please comment!! :)

Apple Pie

I had been waiting until apples were in season to make this pie. I went all out on the crust making it as pretty as possible because I was taking to a pot luck for a Christmas party!! You can't really go wrong with homemade apple pie. It wasn't really anything special. Just your usual apple pie.

Black Cherry Oatmeal Crunch Squares

These were not really black cherry, because I was not willing to spend $7 on a small jar of black cherry jam. So mine were strawberry. They were very easy to pull together and tasted pretty yummy too. Would I make them again?? Probably not. A little too much oatmeal and not really sweet.
